With the knowledge that every single piece of plastic ever made still exists (for my Dutchies; you can read all about it in a blog I wrote a little while back), I am really trying to avoid any food that comes in plastic. If you are aware of what plastic is doing to our wildlife and to our own health it is heartbreaking that so much of our food is (still) packaged. When really it is so not necessary! I am hoping that one day we will have a complete worldwide plastic ban (may it come soon!). Anyway in the meantime I am on a mission to try and make some of my favorite foods myself. With that idea I experimented yesterday with making a vegan pesto for the first time. I love p-e-s-t-o-! I love it with my pasta, on my pizza or combine it with humus and tomatoes on a cracker.
So here is the recipe;
– 75 grams of organic spinach;
– 20 grams of cashew nuts;
– approximately 10 grams of fresh organic basil;
– 2 cloves of organic garlic;
– the juice of 1/2 a lemon.
Put all of the above ingredients in a blender, mix it and there you have it. It is as simple as that! It didn’t even take me more than five minutes to make. That is quicker than buying it in the supermarket!
